What is Lebanese red lentil soup?
Known as shorbet adas in Arabic, this soup is a very simple yet delicious dish that is commonly enjoyed in Lebanon as well as other parts of the Middle East with variations.

Chop the onions and carrots, and sauté them in olive oil with salt in an Instant Pot set to "sauté" or in a large pot on the stovetop on medium heat.

Once the onions are translucent, add the ground cumin and cook until fragrant. Then add the rinsed and drained lentils and toss together.

Add water or broth to the Instant Pot and pressure cook on high for 10 minutes, then natural release for 10 minutes. If using the stovetop, simmer the lentils until they are very soft.

Place an immersion blender in the bottom of the pot and blend the soup until very smooth and creamy. Alternatively, transfer the soup in batches to a high speed blender to blend.

Garnish the soup with pita chips, lemon wedges, parsley, and cumin. Enjoy!
